Starting off the week with delicious golden summer squash zoodles! I ate mine as a meal but feel free to top with any protein of your choice or serve as a side dish. 

INGREDIENTS

  • 2 spiralized summer squash
  • 1 tablespoon olive oil
  • ½ teaspoon turmeric
  • ½ teaspoon garlic powder 
  • ¼ teaspoon black pepper 
  • 2 tablespoons parsley, minced
  • Salt, to taste

 

  1. Spiralize the summer squash. 
  1. Heat up the oil in a wide pan on high heat and sauté the squash for about 1 minute. Once wilted, add in the spices and parsley and cook to preferred doneness.
